Desserts for one can be elegant. Keep parfait glasses available to layer your fruits, puddings and whipped toppings.
Baked apples: Core an apple and split about 3/4 down in four sections. Dot with about ½ teaspoon margarine, a sprinkle of cinnamon, 1 tablespoon oatmeal, and 1 teaspoon of brown sugar. Microwave on high for 4 minutes or until fork inserted in side of apple comes out easily.
Broiled Banana: Slice a banana into quarters lengthwise. Coat with orange juice and broil for a few minutes or until lightly browned. Sprinkle with cinnamon or nutmeg. Serve plain or over yogurt.
Berry Parfaits: Keep fresh berries on hand; the deeper the color, the better. Layer with low-fat yogurt and top with granola.
Smoothie: Combine frozen yogurt or sherbet with fresh berries, throw in a banana and skim milk. Use a blender to make a drinkable dessert.
Banana Split Parfait: Layer a parfait glass with crushed graham crackers or vanilla wafer crumbs, (any low-fat cookie will do). Follow with frozen yogurt, sliced bananas, fresh berries and a drizzle of chocolate syrup. Repeat layers and top with Cool Whip. This is great frozen or freshly made.

2/3 cup fresh peaches
1 teaspoon brown sugar
1/8 teaspoon cinnamon
4 spritzes fat free margarine spray
3 tablespoons Reduced fat Bisquick
1 tablespoon sugar
2 tablespoons skim milk
Combine fruits in small (approximately 2 cup) oven proof dish. Sprinkle with brown sugar and cinnamon. Spray with margarine spray, if desired.
In small mixing bowl, combine Bisquick, sugar and milk. Stir to blend well.
Pour Bisquick mixture over fruit in baking pan. Use knife to cut through ingredients, as if to marbleize.
Bake at 350 degrees for 25-30 minutes or until lightly browned.
